Twelve large burritos from one batch.

The latest meal prep came out to twelve evenly filled, large burritos. This version brought beef, turkey, bacon, eggs, and black beans together in one substantial lunch.

What went into the batch

I used one pound each of lean ground beef, lean ground turkey, and bacon, draining the bacon grease. I added a full can of black beans, eggs, egg whites, Greek yogurt, a scoop of protein powder, spinach, and peppers. Each burrito got a slice of cheese and a large Mission Carb Balance tortilla.

  • 1 lb lean ground beef
  • 1 lb lean ground turkey
  • 1 lb bacon, grease drained
  • 1 full can black beans
  • 1 cup egg whites and whole eggs
  • Greek yogurt and 1 scoop protein powder
  • Spinach and peppers
  • 12 large Mission Carb Balance tortillas
  • 12 cheese slices, one per burrito

The filling was divided evenly among all twelve. I did not record every ingredient amount, so these are batch notes rather than a measured recipe. Nutrition varies by the exact products and portions used.

This is a different batch from the office-day burritos already on the site. That recipe remains there as its own version. I would rather keep the two batches distinct than quietly change the earlier recipe to fit this one.

The next training adjustment

I am also considering a change to my workouts: more attention to core work and the upper-body dumbbell exercises I have been doing, alongside the low-impact cardio I enjoy. I am working through what that looks like before calling it a new plan. For now, the posted workout schedule is a record of the earlier routine.

Food and training both have to be practical enough to repeat. I will share the revised plan once I have actually settled into it.
