High-Protein Orange Chicken & Rice

Ingredients
- 24 oz boneless skinless chicken breast, cubed
- 3 Tbsp cornstarch, divided
- 1/2 cup Sparkling ICE Orange Mango
- 1 1/2 Tbsp honey
- 1 Tbsp ketchup
- 1/2 Tbsp each rice vinegar and low-sodium soy sauce
- 1 Tbsp each garlic paste and ginger paste
- 1 cup (200g) dry jasmine rice
- 1 1/2 cups chicken bone broth
- Garlic salt and black pepper
- Optional sesame seeds and green onions
Method
- Season chicken and toss with 2 Tbsp cornstarch. Bake at 400°F for 20–22 minutes.
- Cook rice in the chicken bone broth.
- Combine the sparkling water, honey, ketchup, vinegar, soy sauce, garlic, and ginger in a saucepan.
- Mix the remaining cornstarch with 2 Tbsp cold water and stir it into the sauce.
- Simmer gently for 4–5 minutes until thickened.
- Toss chicken in sauce and serve over rice.
