High-Protein Orange Chicken & Rice

A lighter citrus sauce built with baked chicken and bone-broth rice.

Ingredients

  • 24 oz boneless skinless chicken breast, cubed
  • 3 Tbsp cornstarch, divided
  • 1/2 cup Sparkling ICE Orange Mango
  • 1 1/2 Tbsp honey
  • 1 Tbsp ketchup
  • 1/2 Tbsp each rice vinegar and low-sodium soy sauce
  • 1 Tbsp each garlic paste and ginger paste
  • 1 cup (200g) dry jasmine rice
  • 1 1/2 cups chicken bone broth
  • Garlic salt and black pepper
  • Optional sesame seeds and green onions

Method

  1. Season chicken and toss with 2 Tbsp cornstarch. Bake at 400°F for 20–22 minutes.
  2. Cook rice in the chicken bone broth.
  3. Combine the sparkling water, honey, ketchup, vinegar, soy sauce, garlic, and ginger in a saucepan.
  4. Mix the remaining cornstarch with 2 Tbsp cold water and stir it into the sauce.
  5. Simmer gently for 4–5 minutes until thickened.
  6. Toss chicken in sauce and serve over rice.
